Chicken Rollatini


Last night I made Chicken Rollatini with Prosciutto and Cheese and it was a hit! My Husband said it was one of his favorite things that I have cooked for him. Of course he would like it...double meat, AND cheese! There's no way he would think it was something healthy. Silly boy! It wasn't too tough to make, which was a relief, I was a little nervous about it. The only part that was kind of tough was cutting the chicken breast to make a cutlet. After that it was really easy though. I also cooked some red potatoes and red onions, and green beans to go with it. It was a really nice meal, and only took about 35 minutes between preparation and cooking.

You definitely do not want to add extra prosciutto. I had never had it before, and it is a very salty meat. I wouldn't have been able to eat it if I put more in there. It's very very thin though, so it doesn't look like there is a lot in there, but it is packed with flavor! Since you pound the cutlet really thin, it is also really easy to cut through, and very tender.

So definitely a success! I think tonight I will be making the Sicilian Rice Casserole.



Today is mostly going to be packed with cleaning. Mondays I always have more to do because I tend to let things go a little on the weekend and just enjoy the time I have with my husband being home. I will do pilates though, and go for a run.

My husband is so funny. He really really loves our dog. I do too, we have a great dog. General Stonewall Jackson is a Miniature Australian Shepherd, who weighs about 40 pounds. He is incredibly smart, he listens pretty well, he is a great guard dog, and he never runs off. That's the great thing about a herding dog...even if they run a bit ahead of you, they come back to you without being called, it's in their nature to stay close. Anyway, the point of my story...He is always telling the dog "You're my best friend, you're my best friend in the whole world, I love you" which is sweet...but sooo not who my husband is haha. He is not a super affectionate man, definitely doesn't say a lot of sweet things, he more shows that he cares through his actions. So this morning before going to work he says to the dog "Come here my love, I will miss you so much, when I get home we will go on a walk and have lots of fun, I promise" then he gets up, kisses me, and all I get is "See ya" haha! He was trying to hide his smile though, so he knew what he was doing.


Also, I just want to say Happy 3 Month Birthday to my little boy! He is the sweetest baby in the world, and I am so lucky to have such a great baby. He falls asleep within 30 minutes of being put down, and then he sleeps for about 7 hours straight now! I can't believe how big he has gotten, and that he is so close to sleeping through the night now. He doesn't fuss or cry much, but he is smiling all the time. He has definitely changed our lives, but for the better, and we couldn't be happier.

Weekend Update

On Friday I made the Pork Chops with Dijon Herb Sauce and it was AMAZING. I started my pan hotter than it should have been, so my sauce ended up being more brown, than yellow...but it tasted so so so good! We both loved it. Hubby tried to get every bit of meat off of the bones. It was very easy to make, and pretty quick. My chops were a little thicker than the inch suggested in her recipe...so I just cooked them a little longer on each side. The sauce was really amazing, I can't stress that enough. I served it with red garlic mashed potatoes, and a green salad. We then followed up with lime margaritas! It was a really nice night. Little boy got two bottles of formula, because I do not breastfeed him if I have had any alcohol until I am sure the proper amount of time has passed and it is safe for him. I am very very careful about that.

Saturday I did not make one of my dinners. We had strawberry margaritas this night...and neither of us felt like eating much. I made a little mac n cheese...he ate most of it, and I had a salad. It was another great night that we spent just hanging out, watching movies, playing with our little lovebug, and having a lot of fun. I also got BEAUTIFUL flowers from my amazing cousin. They are the prettiest flowers I have every gotten!




Today was my first Mother's Day! It was such a wonderful day. The morning was pretty low-key, and while I was taking a shower my boys put gifts for me on the dining room table! but my husband took me out to lunch for sushi...it is my favorite, but he isn't in to sushi so we have never gone! It was a real treat getting to go with him. They have a box lunch there that he really likes with sweet and sour chicken. Baby boy did great, didn't make a sound. He is so good in public!





 So I just have to show off all of my Mother's Day pictures. I love these flowers, they looked amazing from every angle.


I also love this vase! It is so beautiful! I am loving the collection of vases I have now, after getting flowers when I had little boy...I have like 7 vases now. We only had 1 before and it was tiny...It's nice to have a place to put my flowers.


Here is my handsome man, fast asleep when we got home from lunch. He is in his little overalls that he ended up destroying shortly after with a diaper explosion.







These are the frames hubby got me for Mother's Day! I love them, and I am so excited to have places to put more pictures! It also shows off little man, and my flowers again!









This is the note that "The Baby" wrote for me. My husband is so sweet sometimes!














After the diaper incident, we had some snuggles together on the couch. We were both exhausted from the whole thing!






We both fell asleep for a 5 minute catnap.












Speaking of exhaustion...I am going to go get in bed! I hope all of you mother's had a wonderful Mother's Day. And I hope everyone else told their mother how much they love them, and had a great Sunday!!!

Lime Shrimp Avocado Salad

Happy Belated Cinco de Mayo! We had a good night. I made Lime Shrimp and Avocado Salad. It super delicious! Once again I made a couple substitutes. Hubby still doesn't like tomato chunks, and doesn't like raw onion...so instead of that and oil I just added a little bit of salsa. He thought the jalapenos made it a little too spicy for him...but he is just being a sissy, it was perfect. I used about 10 ounces of shrimp, and two small avocados.

I served it with a few tortilla chips (more for my husband) and it was great putting the salad on the chips and eating it that way, or just by itself with a fork. My husband had to go back into work around 8:30 for an hour and a half, then he came home and I had already gotten the baby to sleep, so I made our mango margaritas. The recipe called for a bit too much sugar and sour mix. I thought they were pretty decent though. I put two fresh mangoes in the blender (for two drinks-so if nothing else we both got a nice fruit serving), 4 shots of tequila (maybe a little more), 3 shots of triple sec, and about 2 shots of sour mix, and 1/4 cup of sugar, and a little ice. Hubby thought it was too pulpy, not icy enough, and too sugary, with too much sour mix. So he wasn't a huge fan, but still drank 3/4 of it, so he obviously didn't totally hate it.

I almost had a total meltdown last night. I plugged my iPhone into my computer to charge, which I rarely do. I had finally updated my iTunes last week from like a two year old version. It asked me to upgrade the software on my phone so I said okay. Then it said it failed, and my phone was in recovery mode and had to be factory restored. I lost EVERYTHING. Contacts, Apps, Pictures (all 467 of them-mostly of baby boy). I was FURIOUS...luckily, it had synced my phone right before all that. So I got my contacts and media back...but no apps. I hadn't paid for any of them though except for Oregon Trail, so that's not a huge deal. I don't know what I would have done if I would have lost all of my contacts though. Some of those numbers I have no way of getting again.

Anyway, it is beautiful out today. I am going to do some pilates in the house, do some cleaning, and then go for a run. Still on C25K week 1. I don't think I am ready to move on yet. My body is just nowhere near where it was before having my little boy, it needs some time to build up a little strength again. I think the pilates will be really good for that. I love how it stretches me out, and I am always surprised at how my muscles feel sore and worked after, but it didn't seem that hard while doing it. I always feel refreshed afterwards, not exhausted, which is really really nice. It's a great workout, and I strongly suggest it for anyone who has not tried it! All you need is a pilates dvd and some floor space. Maybe a soft mat if you have hard floors.

Carne Bistec

I started my week of SkinnyTaste meals with Carne Bistec. I used basmati rice, and it was the perfect choice! I almost used jasmine, but I think this was a much better choice (it's the kind you get at Indian restaurants)

It was really easy to make, I did however substitute a small can of tomato sauce, for actual tomatoes. My husband does not like chunks of tomato at all. I went pretty heavy on the cumin and garlic powder, but did not measure them. I went more by smell.



It smelled so good I couldn't wait to eat it...I almost forgot a picture, and had to get a picture of my leftovers, so please excuse the cheap tupperware. My husband really liked it, his only complaint was that there was too much onion. I used about half of a big yellow onion. I thought it was the perfect amount.



The rice took about 15 minutes to cook, and the rest only took about 8 minutes. It was very quick. I am so excited for tomorrows Cinco de Mayo dinner, the lime shrimp avocado salad...I am also making Mango Margaritas, with fresh pureed mango! YUM!

Today is a Good Day!

Yesterday sucked. Fight with the husband, and he decided to eat McDonald's instead of letting me cook. But today is a new day, and I will start on my planned dinners tonight. I was still feeling kind of under the weather yesterday too. It didn't help that I had gotten like zero sleep that night. (Well, about 4 hours)

Today is a new day though! I am not going to let it be bad. I feel better, am rested, and its beautiful out (and not too hot!) Here at about 1:30 I will go run. I will make a nice dinner, even if he decides not to eat it, and I will get the house cleaned up!

When I am ready to buy some new running shoes, I found the ones I want...


They are Puma's and they have a LOT of great features, and good reviews. There is more info here if you want to check them out further, but I won't bore you with it here. My shoes now aren't even really running shoes, they are just semi-athletic shoes. I figure another month or two of those won't hurt, right? Then maybe I can ask hubby to have these be a reward for doing well with my running.



I admit, learning to keep up a whole house is definitely new to me. And it's a bit overwhelming at times. Most days I get the kitchen, dining, and living room clean, because that's the space we use the most. My husband is sooo messy though, every night its trashed again. I hate it! I am not good with laundry, so we have a TON of dirty laundry, and a bunch of unfolded clean laundry. I really despise doing laundry, and it's tough doing it for 3 people. I need to get caught up, then be better about it. I have a nickname for hubby though, since he is so messy....

I rarely call him pigpen to his face, but he is naturally a very very very messy person. I think its because his mother always cleaned up after him. I doubt he had to do anything around the house growing up. She did not work until he was in high school. Speaking of, I really really do not want to work until my youngest child is in school, and even then, only part time. I think if you have the means to, it's very nice to be able to be involved with their school, and be the one that raises them..not a daycare. So I think I will just keep going to school. Maybe just get a Masters? Not that I am even close to a Bachelors yet. But if I go year-round online, I could probably get a Masters done by the time I am ready to work. I only want one more kid, and in about 2 years. I have a lot of time to think about all of that I guess though. I will just work on a Bachelors for now, and trying to figure out what I want to do.

ST Dinner Challenge!

I have decided that for the next 7 days, every dinner I make will be from Skinny Taste. I generally eat leftovers from the night before at lunch. And I will have oatmeal and fruit for breakfast.

I am really hoping I can find all the things I need for these recipes at the commissary. I should be able to, but there are a few things I am not too sure about. I also hope the interstate to get me there will reopen by then. I prefer not to take the access roads if they have much water on them. Hopefully this rain will stop so it will stop flooding! This is the actual road he had to take today to get to base...


I looked up the recipes while hubby was home and showed him pictures to make sure he would eat everything, since he is super picky. He doesn't like most vegetables, and isn't too big on rice, and just doesn't like anything that looks healthy. Silly boy.

So far I have planned as the main dishes..

Tuesday Night : Carne Bistec
Wednesday Night: Dijon Pork Chops  (I am not a big pork fan, but this looks pretty good)
Thursday Night: Lime Shrimp and Avocado Salad Good for Cinco de Mayo!
Friday Night: Chicken Rollatini with Prosciutto and Cheese
Saturday Night: Coconut Chicken with Honey Mustard Vinaigrette
Sunday Night: Sicilian Rice Ball Casserole
Monday Night: Chicken and White Bean Enchiladas with Creamy Salsa Verde

I will make sure to take pictures of everything, and write up my own little review on it! I am really hoping I can get my husband to enjoy this stuff, and start making these kinds of healthy meals every night!

I am feeling pretty sick today, so no running or anything today. I think I may be getting my first post-partum period or something. Ugh, feel like crud! It's been a pretty boring day overall. Just cleaned house a little, rested, and then worked on this weeks meal plan and grocery list.

Thankfully tomorrow is trash day, so today I get to clean out my fridge and freezer, and start fresh with new groceries tomorrow! I always love Monday nights for that very reason. I love having a cleaned out fridge.

Baby is fussing, guess all this talk of food is making him hungry!

Registered!

I am officially registered for the half-marathon! So is my cousin, and my friend, Jenny! I have also invited my cousin Jenny. My husband said if I get 3 friends to complete this with me, he will give us $500 to go out and celebrate afterwards! I figure that's good for a massage for all of us, and dinner and drinks after! So excited!!
